Overview
Catalase is a food-grade enzyme that breaks down hydrogen peroxide into water and oxygen.
In food processing it is used in removing residual hydrogen peroxide, for example after cold sterilisation in dairy, and in glucose-oxidase systems. The specification for your application is confirmed on the technical data sheet and the certificate of analysis for each batch.
