Glucose Oxidase is a food-grade enzyme that oxidises glucose to gluconic acid, consuming oxygen in the process.
In food processing it is used in oxygen removal, dough strengthening and glucose removal. The specification for your application is confirmed on the technical data sheet and the certificate of analysis for each batch.
